RE-NUT is a Swiss FoodTec start-up that develops, patents and licenses innovative manufacturing methods for processing culinary nuts (e.g. EP3903601). Instead of shelling the nuts and obtaining only the nut kernels, the RE-NUT technology processes the entire nuts together with its hard outer shells. This boosts the yield of resulting nut flour, nut paste or nut milk, as the mass of the nutshell ranges from 30% (peanuts) to 60% (hazelnuts, almonds) and brings all the valuable fiber into the nutritional circle, instead of burning or using them for bedding. This not only lowers the manufacturing costs but also boosts the sustainability footprint of the entire nut industry, which annually produces around 55 Million tons.
